Pineapple yogurt cake can be made in different ways. The recipes that you will learn now are traditional cakes, made in the shape of a pudding, and others in a round shape with caramelized pineapple slices on top. Yogurt is mixed into the batter to make it even more fluffy and flavorful.
Cake decorated with pineapple slices and caramel
This is one of the options that has a caramel bottom with pineapple slices, and on top is the cake. When it's time to unmold, the pineapple remains on top.
- Pineapple: 1 can;
- Cherries in syrup: 8 units;
- Pineapple yogurt: 1 small pot;
- Egg: 4 units;
- Sugar: 3 times the measure of a cup of yogurt;
- Wheat: 3 times the measure of a cup of yogurt;
- Oil: 1x the measure of the cup of yogurt;
- Yeast: 1 teaspoon;
- Liquid caramel: to taste.
-In the bowl of an electric mixer, place the whole eggs, the oil, the sugar, the yogurt, the flour, the baking powder and then, beat for about 10 minutes.
-Lubricate the can with liquid caramel and in the bottom place the pineapple slices, the cherries cut in half, drained and dried with absorbent paper.
-After the dough, place it on the pineapple and bake in an oven preheated to 180 degrees, approximately 35 to 40 minutes.
-Once cooked, remove it from the oven and prick with a fork. Pour in some syrup from the pineapple can to moisten the cake. Then unmold.
Cake with fresh pineapple and natural yogurt
This is also a similar version, with the pineapple slices decorated, but in this option there is fresh pineapple and the yogurt is natural, without flavor.
- Sugar: 2 cups + 1 cup;
- Sliced pineapple: 1 unit;
- Egg: 3 units;
- Oil: 1 cup;
- Natural yogurt: 1 cup;
- Wheat: 1 ½ cup;
- Yeast: 1 tablespoon;
- Water: ½ cup (for caramel).
-Make the caramel with a cup of sugar and water and spread it on the tin.
-Place the pineapple slices on top of the caramel.
-Beat the remaining ingredients in a blender for about 3 minutes.
-Little by little add the wheat flour and finally the yeast.
-Pour into the pan, bake for about 40 minutes or until just baked.
-Unmold while still hot.
Pineapple cake with natural yogurt
This recipe has pineapple juice and yogurt in the dough, and then a pineapple syrup.
- Gems: 3 units;
- Clear: 3 units;
- Sugar: 1 cup;
- Margarine: 4 tablespoons;
- Pineapple juice concentrate: 1 cup;
- Natural yogurt: ½ cup;
- Yeast wheat: 3 cups;
- Pineapple juice: 1 cup (for syrup);
- Water: ½ cup (for syrup);
- Sugar: 4 tablespoons, for syrup.
-Beat the egg yolks, margarine and sugar in a mixer until creamy.
-Gradually add the flour to the cream, alternating with the pineapple juice and yogurt.
-Gently mix the egg whites with snow.
-Put the dough into a medium greased and floured pudding shape.
-Bake in a medium oven, preheated to 180 degrees, about 40 minutes.
-For the syrup: in a saucepan mix the ingredients and cook them until it forms the texture of a syrup.
-Once the cake is ready, unmold and add the syrup.
