Spicy Herb Muffins with Cheddar Cheese and Pine Nuts

The following vegetarian muffin recipe is delicious, easy to make and ideal to start the day with all the energy.

Generally children and many adults like sweet muffins and it is logical that it happens, but with this recipe, which has a very good contrast of flavors and attractive to the palate, you can try to convince diners to return to a vegetarian taste. The result will surely be very positive !!

Ingredients for 12 units:

-1 teaspoon fennel seeds

-Salt to taste

-Cheddar cheese 150 g

-Four 180 g

-Yeast in about 1 teaspoon

-Oat flakes 4 tablespoons

-Carrot 400 g

-Wild herbs (mint, wild garlic and achillea) 80 g

-Egg 1

-Butter melted 100 g

-Milk 125 ml

-Pine nuts 40 g

Preparation:

- Spicy Herb Muffins with Cheddar Cheese and Pine Nuts will take half an hour to make and another half hour to cook

-Firstly, we heat the oven to 180 ° C, while covering the molds of the muffin tray with paper molds. This will allow them not to deform while they are cooked.

-In a frying pan without oil, we toast the fennel seeds. Once they are ready, we mix them with the salt in a mortar and chop them. While we are grating the cheese to save time.

-Then we mix the flour with the baking powder and the rolled oats.

- On the other hand we wash the carrot well and grate it, while we chop the leaves of the herbs.

-Then, we mix the grated carrot with the herbs, the egg, the melted butter, the milk, the salt with the already chopped fennel seeds and about two-thirds of the cheese.

-Next, we add the mixture of the flours and about two thirds of the pine nuts and distribute the preparation in the muffin molds.

- Finally, sprinkle with the remaining cheese and pine nuts and cook them for approximately 30 minutes.

-Serve them hot and enjoy this delight !!
