Desserts with cherries: cherry panna cotta

Therehomemade panna cottait is prepared with fresh ingredients and not with freeze-dried products. Here's how to make homemade panna cotta with cherries, the ingredients for 6 portions:

  • 100 ml of milk
  • 10 g of gelatin sheets
  • 100 g of sugar

  • 1 untreated lemon

Here's how to proceed:

Soak the gelatin sheets in cold water. Meanwhile, heat the milk without boiling it. Add the drained and squeezed gelatin and let it melt, stirring carefully.

In a saucepan aside, mix the sugar with the cream, add the vanilla and heat over low heat. Melt the sugar and bring to a boil. Only now can you remove the vanilla * and add the mixture containing the isinglass.

Mix.

Pour the mixture into low glasses (transparent glass), to be immersed in water and ice to cool quickly.

Wash and dry the cherries. Cut them in half and pit them. Put the cherries on the fire with 100 g of sugar. Cook with a tablespoon of water and the grated rind of the lemon and the juice of half a lemon. Jumbled up. After a few minutes, blend half of the fruit and leave the other whole. Let it cool down. Use the mixture to garnish eachhomemade panna cottaadding a layer of a few millimeters.

Store thesweet cherryin the fridge and let them cool until they are completely solid.

* The Madagascar vanilla bean, since it is highly aromatic, can be “recycled” in the preparation of cherry liqueur by adding it to the stones.

Recipe of the cherry tart with almond and pistachio cream

Everyone would know how to prepare a classic cherry tart. The classic recipe, in fact, involves the preparation of shortcrust pastry to be filled with a cherry jam similar to that prepared with the recipe for panna cotta. In this version the shortcrust pastry will be garnished with an almond cream and a layer of cherries cut in half.   • 500 ml of milk
  • 4 yolks
  • 100 g of sugar
  • 40 g of potato starch
  • 50 g of almond flour
  • 500 g of cherries
  • 50 g of unsalted pistachios
