Here how to make homemade panna cotta:

Soak the gelatin sheets in cold water. Meanwhile, heat the milk without boiling it. Add the drained and squeezed gelatin and let it melt, stirring carefully.

In a saucepan aside, mix the sugar with the cream, add the vanilla and heat over low heat. Melt the sugar and bring to a boil. Only now can you remove the vanilla * and add the mixture containing the isinglass.

Pour the mixture into low glasses (transparent glass), to be immersed in water and ice to cool quickly.

Topping to garnish the chocolate panna cotta

  • 300 ml of fresh liquid cream
  • 70 g of sugar
  • 125 ml of whole milk
  • 2 egg whites (70 - 80 g)
  • a pinch of fine salt
  • Vanilla pod

To prepare thepanna cotta without isinglass, you will use the egg whites. Here's how to do it:

  • Pour whole milk and cream into a saucepan.
  • Add the sugar, a pinch of salt and the vanilla pod.
  • When the ingredients are about to boil, turn off the heat and let them cool. When it is warm, remove the vanilla pod. Jumbled up.
  • Add the egg whites to the now cold liquid. Mix with a spiral whisk and mix well.
  • Pour the mixture into molds forpanna cotta175 ml each (to obtain 3 panne cotte).
  • Place the molds in an oven pan in which you will pour boiling water, just enough to cover 3/4 of the height of the molds themselves.
  • Preheat the oven to 160 ° C (if you have a convection oven, heat it to 140 ° C). The panna cotta will have to cook in the oven for 60 minutes.
  • Once cooked, take out your ownpanna cotta without gelatinand let it cool to room temperature. When they are lukewarm, move them to the fridge for at least 2 hours before serving.
