In the article entitledsweets with cherrieswe have seen how to do thepanna cotta with cherryfollowing the original pannacotta recipe and using fresh fruits instead of the saddest prepackaged topping. I recommend that you follow therecipejust indicated to prepare:

  • Panna cotta with sour cherry (with homemade sour cherry topping)
  • Cherry panna cotta (with homemade cherry topping)
  • Strawberry and cherry panna cotta (with homemade strawberry topping)

With the same preparation criteria you can prepare one panna cotta with blueberries or with berries. On this page we will see theoriginal recipe of panna cottawith a chocolate topping (homemade chocolate topping).

Panna cotta with chocolate, original recipe

Here are the ingredients for the panna cotta:

  • 500 ml of fresh cream
  • 100 ml of milk
  • 10 g of gelatin sheets
  • 100 g of sugar
  • a vanilla pod

Notes on ingredients used

The cream must be purchased strictly in the departmentfridgeof the supermarket and not among long-life products.

Also beware of vanilla, choose excellent quality pods because only those can really make a difference in terms of aroma! On Amazon, a jar of vanilla pods from Madagascar (of excellent quality) you buy with 19.90 euros with free shipping. For all the info I invite you to visit the official Amazon page: Madagascar vanilla.

For isinglass, just like cream, you can find it in the supermarket. Very popular are the foil sachets marketed by PaneAngeli.

Here how to make homemade panna cotta:

Soak the gelatin sheets in cold water. Meanwhile, heat the milk without boiling it. Add the drained and squeezed gelatin and let it melt, stirring carefully.

In a saucepan aside, mix the sugar with the cream, add the vanilla and heat over low heat. Melt the sugar and bring to a boil. Only now can you remove the vanilla * and add the mixture containing the isinglass.

Pour the mixture into low glasses (transparent glass), to be immersed in water and ice to cool quickly.

Topping to garnish the chocolate panna cotta

Typically the topping is prepared with bitter cocoa but, in this recipe, I want to offer you a topping with milk chocolate. If you prefer more aromatic flavors, use the dark chocolate if the sweet taste never tires you, useWhite chocolate.

For the garnish:

  • 300 g of milk chocolate
  • 100 g of milk

Melt the milk chocolate (white or dark chocolate) in a water bath, add the milk and let the sauce set over low heat, stirring constantly. If necessary, add more milk: you will have to obtain a thick cream but not too much, from the consistency ofhomemade topping.
